Fajitas!

I made a complete meal for some of my friends! It’s also super easy :) I used zucchini, tomato, green and red bell pepper, and onion for the veggies in the fajita. I bough a rotisserie chicken from the grocery store and shredded it. I added some spice, red chilli paste and chopped garlic, to both the veggies and chicken. The beans were mixed with taco seasoning. Of course, I also made guacamole. (Haas avocados, tomatoes, onions, garlic powder, lemon juice, salt and pepper) We made burritos with warmed tortillas, salsa, beans, guacamole, veggis and chicken fajitas!

What goes with ketchup!?

Homemade fries and mac n’ cheese! If you’ve never put ketchup on your mac n’ cheese, trust me. 

Super simple dinner!

Fries:

Cut a potato :), drizzle olive oil, lemon pepper, salt. TOSS so the potato wedges are coated. Heat the oven to 375 degrees, bake for about 40 mins. I turned the fries half way through.

Mac n’ Cheese:

Cook some pasta, to cooked pasta add some milk, shredded cheese, black pepper, and salt. MIX and you’re done :)

Veggie Sausage Egg Breakfast Sandwich

I made some scrambled eggs with veggie sausages. I’ve had some of my friends who eat sausage taste it and they can’t tell the difference. For my “fake meat” eats I swear by Morning Star. For this meal I used :

I added a little bit of cheese on top before assembling my breakfast sandwich. It was super quick and delicious!
